About the Producer
Originally from the Jura, Nicolas Jacob began his journey working on local organic vegetable farms before discovering his passion for wine. During this time, he sought out the best mentors, starting with Laurent Macle at Domaine Macle in Château Chalon, where he learned to craft exceptional traditional oxidative Jura wines. He then joined Jean-François Ganevat, eventually becoming the right-hand man at the domaine, where he honed his skills in both vineyard management and vinification. In 2015, Nicolas purchased just over 1 hectare of vines in L’Etoile, planted with Chardonnay, Pinot Noir, and a bit of Savagnin. He began to develop his own winemaking style, heavily influenced by his experience at Ganevat. His approach emphasizes natural fermentation, minimal use of SO2, extended aging, and a variety of micro-cuvées that reflect the unique terroir. By 2019, Nicolas fully embarked on his own journey by acquiring a small winery in Cesancey and expanding his holdings to over 5 hectares of vines in the surrounding area, including a 3.5-hectare block in Augea and an additional hectare in Rotalier. His wines continue to showcase the complexity and diversity of the Jura's terroir.
