About the Producer
Domaine Agnes Paquet is a small boutique winery located in the Cote de Beaune appellation in Burgundy, France. Founded in 2000 by Agnes Paquet, Agnes' grandparents purchased a vineyard in Auxey-Duresses in the 1950s, but instead of growing the grapes themselves, they leased the vineyard to local growers. In the 1990s, Agnès' parents decided to sell the vineyard, and when they heard the news, Agnès decided to protect and make use of the family's property. So she made time to learn about winemaking and viticulture, in addition to her regular job. Finally, in 2000, Agnes created her own winery based on the family vineyard. Today, Agnès Pacquet has 8 hectares of vineyards located in the villages of Auxerre, Pommard, Chassagne-Montrachet and Saint-Aubin. As a female viticulturist, Agnès has a very meticulous approach to vineyard management. Agnès-Parcet uses machinery to loosen the vineyards during the non-harvest season, which not only increases the permeability of the soil and helps microbial growth, but also eliminates the use of herbicides by weeding. The winery keeps the grape yields between 40HL and 50HL to ensure consistent quality of the wines produced. In addition to this, Agnès Pacquet is strict in the care of the vines (de-budding, de-flanking, etc.) in order to ensure a healthy growth. The grapes are harvested by hand when they reach the desired ripeness, and then selected twice in the winery. The selected white grapes are pressed and then subjected to alcoholic fermentation in oak barrels. After fermentation, the wine is transferred to oak barrels in the storage room to age for 11-18 months, during which time malolactic fermentation is completed. The red grapes are crushed and sent to temperature-controlled stainless steel fermenters for fermentation, and the finished wine is aged in 15% to 25% new oak barrels for 10-16 months. Finally, all the wines are bottled in the winery by gravity bottling. Currently, Agnès Pacquet produces nine wines, including four Chardonnay whites, three Pinot Noir reds and two sparkling wines. The wines of Château Agnès Pacquet have been featured in several national and international wine magazines and have been praised by several media outlets, including La Revue du Vin de France.
