The 1996 Salon is just dazzling. It needs a good bit of air to fully open up, but the 1996 Salon is simply a mesmerizing Champagne that sizzles with energy, cut and total precision. A second bottle later in the week was every bit as compelling. When the 1996 Salon is on, it is just about as great as Champagne gets.

The 1996 Salon is just beginning to enter the early part of its plateau of maturity. Time in bottle has softened some of the razor-sharp focus the 1996 had when it was first released, but all of the energy it had as a young Champagne remains. A host of candied lemon, almonds and wild flowers punctuate the sculpted, persistent finish. Readers who own the 1996 can look forward to another two decades or more of exceptional drinking. This is the ultimate expression of Champagne as wine.

The vibrancy and drive of the vintage came through in spades in the 1996 Salon, which was flat-out stunning. The 1996 remains a youngster, but is immensely beautiful, even at this stage. Several recent bottles have been just as stunning.

The 1996 Salon is yet another wine that is maturing splendidly. Once focused to the point of being painfully austere and angular, today the 1996 Salon has begun to soften and fill out. My latest bottles have been rich, generous and totally compelling in every way.

This bottle of the 1996 Salon is like every other bottle I have had recently, which is to say tight, tight, tight. Still, this painfully unevolved, mineral-driven wine shows tons of potential in its floral, white fruits. In a recent tasting of the 1979 Champagnes, the Salon was one of the finest wines, but it needed several hours of air to open up. Although the 1996 is pure magic in a glass, it remains a wine for the exceedingly patient.

The 1996 Salon was another standout, even if this tightly-coiled powerful wine needs another decade. Still, this was a great showing from one of the most reluctant stars of the vintage.

You know it is going to be a fantastic party when 1996 Salon Blanc de Blancs Le Mesnil is served as the aperitif. This powerful, taut Champagne revealed just the barest hint of its ultimate potential behind a focused, laser-like personality. Even though I have had this wine several times recently I still can’t fully wrap my mind around it.

Green-tinged gold. Incredibly complex, intense bouquet of smoky, leesy orange, pear, licorice, minerals and bitter quinine. The superconcentrated citrus, quince and pear liqueur flavors convey an almost painful impression of extract and positively explode across the palate. Elegant, poised and precise in a manner rare for a wine with such flavor intensity. The vibrant, minerally, extremely long finish simply doesn't let up. This should age effortlessly for a decade or two.
About the Producer
Salon is one of the most prestigious houses in Champagne. Instead of making a range of styles that includes a prestige cuvée like most Champagne houses, Salon makes a single prestige cuvée, which is made entirely from Chardonnay from the village Le Mesnil-sur-Oger. The house was founded in 1911 by Eugène-Aimé Salon, who thought that Champagne was overly dominated by heavy Pinot Noir. Consequently, Salon decided to make a top Chardonnay-based label instead. Today Salon is made in only the best vintages. The wine comes from a one-hectare (2.5 acre) parcel owned by Salon and 19 smaller parcels cultivated through agreements with various growers in the Grand Cru-classified Le Mesnil. In years deemed not good enough, the grapes and wine production are diverted to become a part of the Champagne Delamotte label. Salon is held back in cellar for much longer than other Champagnes – it can spend up to a decade in bottle before it is released onto the market, and can be cellared further.
