About the Producer
Dominique Belluard, known as Dom to his friends, has been working his family’s domaine in Ayse since 1988. When he took over, the domaine was involved in polyculture, featuring dairy cows, apples, and various crops alongside grapes. Though a dedicated farmer, Dom aimed to concentrate on his role as a vigneron, leading him to increase the vineyard plantings. He was particularly drawn to Gringet, a nearly extinct white variety unique to Ayse. While some local growers sold grapes to the co-op for sparkling wine, no one was making fine wines or vins de garde from Gringet. Dom expanded his family's plantings through sélection massale and has spent the past couple of decades mastering Gringet, demonstrating its potential in Ayse’s terroir.
